Ingredients

  • 4 whole chicken thighs
  • ½ tsp sea salt
  • 3 tsp black pepper
  • 2 tsp paprika
  • ¼ tsp onion powder
  • 2 tbsp butter
  • ½ cup white onion, chopped
  • 1 tbsp minced garlic
  • 8 oz fresh mushrooms
  • cups orzo pasta
  • 1 tbsp oregano
  • ½ tsp garlic powder
  • ½ tsp crushed red pepper
  • ½ tsp ground thyme
  • 2 cups chicken stock
  • ¼ cup white wine
  • 2 tbsp Worcestershire sauce
  • ¼ cup heavy whipping cream
  • 1 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 400 degrees.
  2. Trim excess skin from the chicken thighs and season both sides with salt, pepper, paprika, and onion powder. Sear the chicken skin-side down for 5 minutes, then flip and sear for an additional 3 minutes.
  3. Remove excess grease from the pan, then add butter, onions, garlic, and mushrooms. Cook until the onions are translucent.
  4. Add the orzo pasta and stir for 1 minute. Then add oregano, black pepper, salt, garlic powder, crushed red pepper, and thyme.
  5. Pour in chicken stock, white wine, and Worcestershire sauce, and mix well. Place the chicken thighs on top, cover, and bake for 15 minutes.
  6. Remove the chicken thighs, stir in whipping cream and parmesan cheese, then place the chicken back on top of the orzo before serving.
