Ingredients

The Chicken

  • 4 pieces sous vide chicken thighs
  • 1 tablespoon macadamia nut oil
  • to taste Dukka seasoning

The Cauliflower Mash

  • 1 head orange cauliflower
  • 7 cloves garlic
  • 2 tablespoons butter

The Spinach

  • 1 pound baby spinach
  • 1 piece shallot
  • to taste salt
  • to taste pepper

Instructions

  1. Steam the cauliflower florets and sliced garlic until tender.
  2. Crisp the Dukka-seasoned chicken thighs in a skillet with macadamia nut oil.
  3. Remove excess grease from the skillet and sauté the diced shallot until softened.
  4. Add the baby spinach to the skillet and season with salt and pepper, cooking until wilted.
  5. Blend the steamed cauliflower and garlic with butter until smooth.
