Crispy Baked Peanut Tofu

Ingredients

The tofu

  • 12 ounces extra-firm tofu

The sauce

  • 2 ½ Tbsp creamy peanut butter or almond butter
  • 1 Tbsp toasted sesame oil
  • 2 Tbsp tamari or soy sauce
  • 2 Tbsp maple syrup
  • 1-2 tsp chili garlic sauce

Cauliflower rice

  • 1 Tbsp toasted sesame oil
  • 1 small head cauliflower
  • 2 cloves garlic (minced)
  • 1-2 tsp tamari or soy sauce

Optional veggies

  • 1 cup thinly sliced baby bok choy, green onion, red pepper, or broccoli
  • 1 dash sesame oil
  • 1 dash tamari or soy sauce

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Press the tofu for 15-20 minutes, then cut it into ½-inch cubes and spread on the baking sheet.
  3. Bake the tofu for 20-25 minutes until firm and chewy or crispy, based on preference.
  4. Prepare the sauce by whisking together peanut butter, sesame oil, tamari, maple syrup, and chili garlic sauce.
  5. Add the baked tofu to the sauce and let it marinate for 10-15 minutes.
  6. Grate the cauliflower to make rice and mince the garlic.
  7. Sauté the cauliflower rice with sesame oil, garlic, and tamari for about 5-8 minutes until tender.
  8. If using optional veggies, sauté them in sesame oil and add to the cauliflower rice.
  9. Add the marinated tofu to the pan and cook for about 3 minutes until browned.
  10. Serve the tofu over the cauliflower rice and enjoy.
