Crispy Baked Peanut Tofu

Instructions
- Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Press the tofu for 15-20 minutes, then cut it into ½-inch cubes and spread on the baking sheet.
- Bake the tofu for 20-25 minutes until firm and chewy or crispy, based on preference.
- Prepare the sauce by whisking together peanut butter, sesame oil, tamari, maple syrup, and chili garlic sauce.
- Add the baked tofu to the sauce and let it marinate for 10-15 minutes.
- Grate the cauliflower to make rice and mince the garlic.
- Sauté the cauliflower rice with sesame oil, garlic, and tamari for about 5-8 minutes until tender.
- If using optional veggies, sauté them in sesame oil and add to the cauliflower rice.
- Add the marinated tofu to the pan and cook for about 3 minutes until browned.
- Serve the tofu over the cauliflower rice and enjoy.
