Ingredients

The tofu

  • 14 oz extra firm tofu
  • 3 Tbsp tamari or soy sauce
  • 1 tsp chili garlic sauce
  • 1 tsp toasted sesame oil
  • 1 Tbsp maple syrup
  • 4-5 Tbsp cornstarch

The peanut sauce

  • 2 ½ Tbsp creamy peanut butter
  • 2 Tbsp tamari
  • 1 Tbsp chili garlic sauce
  • 1 Tbsp lime juice
  • 2 Tbsp maple syrup
  • 2 tsp sesame oil

For serving

  • Rice or cauliflower rice (optional)

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a baking sheet with parchment paper.
  2. Press the tofu to remove moisture for about 15-20 minutes.
  3. Prepare the peanut sauce by whisking together the peanut butter, tamari, chili garlic sauce, lime juice, maple syrup, and sesame oil in a bowl.
  4. Cut the pressed tofu into ¾-inch cubes and marinate with tamari, chili garlic sauce, sesame oil, and maple syrup for 2-3 minutes.
  5. Coat the marinated tofu in cornstarch until fully covered.
  6. Spread the coated tofu on the baking sheet and bake for 20-25 minutes, flipping halfway through.
  7. Heat a skillet over medium heat, add the baked tofu and peanut sauce, and sauté for about 2 minutes until heated through.
  8. Serve with rice or cauliflower rice if desired.
