Ham and Turkey Frittata

Ingredients

  • 6 eggs eggs
  • 2 cups mushrooms, diced
  • 10 leaves sage, chopped
  • 1 sprig rosemary, chopped
  • 1 sprig oregano, chopped
  • 2 cups leftover or pre-cooked ham or turkey
  • 1 medium sweet potato, cut into small squares
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 350 degrees.
  2. Whisk the eggs in a large bowl.
  3. Add mushrooms, sage, rosemary, oregano, ham/turkey, salt, and pepper to the eggs and mix well.
  4. Heat a large cast iron skillet over medium heat and add your choice of fat.
  5. Once hot, add the sweet potato and cook for 8 minutes, stirring occasionally.
  6. Pour the egg mixture into the skillet and stir to combine.
  7. Transfer the skillet to the oven and bake for 35 minutes.
  8. Allow to cool for a few minutes before serving.
