Ham and Turkey Frittata

Instructions
- Preheat the oven to 350 degrees.
- Whisk the eggs in a large bowl.
- Add mushrooms, sage, rosemary, oregano, ham/turkey, salt, and pepper to the eggs and mix well.
- Heat a large cast iron skillet over medium heat and add your choice of fat.
- Once hot, add the sweet potato and cook for 8 minutes, stirring occasionally.
- Pour the egg mixture into the skillet and stir to combine.
- Transfer the skillet to the oven and bake for 35 minutes.
- Allow to cool for a few minutes before serving.
