Sweet Potato Frittata

Instructions
- Preheat the oven broiler to high and place a rack in the center.
- Microwave the chopped sweet potato in a bowl with water for about 4 to 5 minutes until slightly tender, then drain.
- Heat 2 tablespoons of olive oil in an ovenproof skillet over medium-high heat, then add the ham and cook until browned.
- Remove the ham and set aside, then add the remaining oil, onion, rosemary, and sweet potato to the skillet and sauté until browned.
- In a bowl, whisk the eggs with cheddar, black pepper, and salt.
- Pour the egg mixture into the skillet and sprinkle with ham and feta.
- Broil in the oven for about 3 to 5 minutes until the eggs are set and golden, watching closely to prevent burning.
- If not fully cooked, switch to bake at 350°F and continue cooking until set, then let cool slightly before slicing.
