Sweet Potato Frittata

Ingredients

  • 2 cups peeled and ¾-inch-chopped sweet potato
  • 2 ½ tablespoons extra-virgin olive oil
  • 1 cup diced leftover ham
  • 1 cup thinly sliced yellow onion
  • 1 tablespoon chopped fresh rosemary
  • 8 large eggs
  • cup freshly grated sharp cheddar cheese
  • ½ teaspoon ground black pepper
  • ¼ teaspoon kosher salt
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat the oven broiler to high and place a rack in the center.
  2. Microwave the chopped sweet potato in a bowl with water for about 4 to 5 minutes until slightly tender, then drain.
  3. Heat 2 tablespoons of olive oil in an ovenproof skillet over medium-high heat, then add the ham and cook until browned.
  4. Remove the ham and set aside, then add the remaining oil, onion, rosemary, and sweet potato to the skillet and sauté until browned.
  5. In a bowl, whisk the eggs with cheddar, black pepper, and salt.
  6. Pour the egg mixture into the skillet and sprinkle with ham and feta.
  7. Broil in the oven for about 3 to 5 minutes until the eggs are set and golden, watching closely to prevent burning.
  8. If not fully cooked, switch to bake at 350°F and continue cooking until set, then let cool slightly before slicing.
