Ingredients

The base

  • 4 tbsp cornmeal
  • 1 tbsp olive oil
  • 1 cup unsweetened soy milk
  • 8 eggs

The vegetables

  • 1 onion diced
  • 1 sweet potato peeled and diced
  • 2 cups broccoli florets
  • ¼ cup bell peppers, finely chopped
  • ½ cup sliced black olives
  • 1 cup frozen corn
  • 1 cup fresh parsley, chopped

The seasonings

  • ¾ cup water
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp paprika
  • ¼ tsp ground coriander
  • ¼ tsp cumin
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • ¼ tsp hot chilli flakes

The cheese

  • 75 g grated cheddar cheese

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish with cooking spray or olive oil, then coat with cornmeal.
  2. Heat olive oil in a skillet, add onion, salt, and pepper, and cook until golden.
  3. Add water and sweet potatoes to the skillet, cover, and cook until potatoes are tender.
  4. Stir in broccoli, corn, black olives, and bell peppers, then transfer to the baking dish.
  5. In a bowl, whisk together soy milk and spices, then add eggs and mix well.
  6. Pour the egg mixture over the vegetables and top with grated cheese.
  7. Bake in the oven for 20-25 minutes until eggs are set and cheese is golden.
