Instructions
- Preheat the oven to 375°F and prepare a baking dish with cooking spray or olive oil, then coat with cornmeal.
- Heat olive oil in a skillet, add onion, salt, and pepper, and cook until golden.
- Add water and sweet potatoes to the skillet, cover, and cook until potatoes are tender.
- Stir in broccoli, corn, black olives, and bell peppers, then transfer to the baking dish.
- In a bowl, whisk together soy milk and spices, then add eggs and mix well.
- Pour the egg mixture over the vegetables and top with grated cheese.
- Bake in the oven for 20-25 minutes until eggs are set and cheese is golden.
