Loaded Baked Potato Frittata

Ingredients

The frittata

  • 4 tablespoons olive oil
  • 4 small russet potatoes
  • 8 large eggs
  • 2 tablespoons milk
  • 5 strips cooked bacon
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup Cheddar cheese

For serving

  • to taste sour cream
  • 2 tablespoons green onion

Instructions

  1. Preheat the oven to 400°F.
  2. Heat olive oil in a large skillet and cook the potatoes until tender, about 5 minutes. Add 2 tablespoons of green onion and set aside.
  3. In a medium bowl, whisk together eggs and milk, then stir in the remaining green onion, bacon, potatoes, and ½ cup of cheese. Season with salt and pepper.
  4. Pour the mixture into a greased 10-inch skillet and cook over medium heat until half set, without stirring.
  5. Transfer the skillet to the oven and bake for 12 minutes. Remove from the oven, top with remaining cheese, and bake until melted, about 2-3 minutes.
  6. Let cool for a few minutes, then cut and serve warm.
