Loaded Baked Potato Frittata

Instructions
- Preheat the oven to 400°F.
- Heat olive oil in a large skillet and cook the potatoes until tender, about 5 minutes. Add 2 tablespoons of green onion and set aside.
- In a medium bowl, whisk together eggs and milk, then stir in the remaining green onion, bacon, potatoes, and ½ cup of cheese. Season with salt and pepper.
- Pour the mixture into a greased 10-inch skillet and cook over medium heat until half set, without stirring.
- Transfer the skillet to the oven and bake for 12 minutes. Remove from the oven, top with remaining cheese, and bake until melted, about 2-3 minutes.
- Let cool for a few minutes, then cut and serve warm.
