Instructions
- Make the dressing by whisking together lime juice, avocado oil, honey, garlic, salt, cumin, and black pepper in a small bowl.
- Set aside some jalapeño, red onion, and cilantro for garnish.
- In a medium bowl, add the diced avocados and layer the cucumbers, tomatoes, and remaining jalapeño, red onion, and cilantro on top.
- Drizzle most of the dressing over the salad and gently stir to combine without overmixing.
- Garnish with reserved jalapeño, red onion, and cilantro, adding more dressing and seasoning to taste.
- Serve immediately to enjoy the freshness.
