Ingredients

The salad

  • ½ to 1 whole jalapeño pepper
  • cup diced red onion
  • ¼ cup chopped fresh cilantro
  • 2 whole firm-ripe avocados
  • ½ whole English cucumber
  • ¾ cup cherry tomatoes
  • to taste optional flaky sea salt

The dressing

  • 3 tablespoons fresh lime juice
  • 2 tablespoons avocado oil
  • teaspoons honey
  • 1 clove garlic
  • 1 teaspoon sea salt
  • ¼ teaspoon ground cumin
  • to taste optional freshly ground black pepper

Instructions

  1. Make the dressing by whisking together lime juice, avocado oil, honey, garlic, salt, cumin, and black pepper in a small bowl.
  2. Set aside some jalapeño, red onion, and cilantro for garnish.
  3. In a medium bowl, add the diced avocados and layer the cucumbers, tomatoes, and remaining jalapeño, red onion, and cilantro on top.
  4. Drizzle most of the dressing over the salad and gently stir to combine without overmixing.
  5. Garnish with reserved jalapeño, red onion, and cilantro, adding more dressing and seasoning to taste.
  6. Serve immediately to enjoy the freshness.
