Ingredients

The salad

  • 2 medium Avocados (cubed)
  • 1 medium Persian cucumber (diced; ~1.5 cups)
  • 10 oz Grape tomatoes (halved; ~2 cups)
  • 1 medium Jalapeño (seeded and diced)
  • ½ cup Whole kernel corn

The dressing

  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)
  • 1 tbsp Fresh cilantro (chopped)

Instructions

  1. Combine avocado, cucumber, grape tomatoes, jalapeño, and corn in a salad bowl and mix well.
  2. In a small bowl, whisk together olive oil, lemon juice, sea salt, and black pepper to make the dressing.
  3. Pour the dressing over the salad and mix to combine. Top with fresh cilantro.
