Instructions
- Cook lentils according to package directions to yield 1½ cups cooked lentils.
- Preheat the oven to 400 degrees Fahrenheit.
- In a large bowl, mix the sweet potatoes, green beans, red pepper, raisins, and cooked lentils.
- In a small bowl, mix the olive oil, vegetable broth, ginger, garlic, and curry powder, then pour it over the vegetable mixture.
- Transfer the mixture to a covered casserole dish.
- Bake covered for about 30 minutes, or until the vegetables are tender.
