Instructions
- Preheat the oven to 350°F (175°C).
- Cut the sweet potatoes into cubes and boil them with a pinch of salt until soft.
- Drain and rinse the potatoes with cold water to cool them down.
- In a bowl, mash the potatoes with coconut milk, vanilla extract, and sea salt.
- Spread the mashed potatoes into a baking dish.
- In a food processor, blend the topping ingredients until crumbly.
- Sprinkle the topping over the sweet potato mixture.
- Bake for 25 minutes.
