Ingredients

The base

  • 2 pounds sweet potatoes
  • 1 cup lite coconut milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt

The topping

  • ½ cup coconut sugar
  • ½ cup pecans
  • ½ cup oats
  • 2 tablespoons maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ¼ teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the sweet potatoes into cubes and boil them with a pinch of salt until soft.
  3. Drain and rinse the potatoes with cold water to cool them down.
  4. In a bowl, mash the potatoes with coconut milk, vanilla extract, and sea salt.
  5. Spread the mashed potatoes into a baking dish.
  6. In a food processor, blend the topping ingredients until crumbly.
  7. Sprinkle the topping over the sweet potato mixture.
  8. Bake for 25 minutes.
  9. Serve.
