vegetable stock paste

Instructions
- Preheat the oven to 425°F.
- Arrange halved sweet potato slices cut side down in an 11x9x2 inch baking dish.
- Dust the arranged potatoes with the Winter-Warming Spice Blend.
- In hot water, combine dijon and vegetable stock paste, then pour over the potatoes.
- Dollop vegan butter over the potatoes and cover with foil.
- Bake covered for 30 minutes, then uncover and bake for an additional 35-45 minutes until bubbly.
