Ingredients

The casserole

  • 4 large sweet potatoes, peeled and chopped
  • ¼ cup vegan butter
  • 1 cup non-dairy milk
  • cup brown sugar
  • 1 tsp cinnamon
  • tsp nutmeg
  • 1 tsp vanilla extract
  • ½ tsp fine sea salt

The topping

  • ¼ cup flour
  • ¼ cup old-fashioned oats
  • ¼ cup brown sugar
  • ¾ cup pecans, chopped
  • 2 tbsp vegan butter

Instructions

  1. Boil sweet potatoes in a large pot until fork-tender.
  2. Preheat the oven to 350°F and grease a baking dish.
  3. Mix topping ingredients in a bowl until crumbly.
  4. Drain and mash the sweet potatoes with butter, milk, sugar, spices, and salt until smooth.
  5. Spread the sweet potato mixture in the baking dish and top with the crumbly mixture.
  6. Bake for 30 minutes until bubbly and golden.
