Hearty Meatball Soup

Instructions
- Prepare the mirepoix by washing, peeling, and dicing the vegetables.
- Cook the mirepoix in a large pot with olive oil over medium heat until softened.
- Add the diced tomatoes, tomato sauce, water, and beef bouillon to the pot and bring to a simmer.
- Stir in the dry pasta and turkey meatballs, and let the pot simmer until the pasta is cooked through.
- While the soup simmers, rinse and chop the parsley, then add it to the pot after the pasta is cooked.
- Serve the soup with freshly grated parmesan on top.
