Instructions
- Preheat the broiler and lightly grease a baking sheet.
- Combine all meatball ingredients in a large bowl and mix well.
- Scoop 2 tablespoons of the mixture, roll into meatballs, and place on the baking sheet.
- Broil meatballs for 6 to 7 minutes until browned but not fully cooked.
- In a heavy-bottomed pot, heat olive oil over medium-high heat and sauté onions, carrots, celery, and garlic until softened.
- Add beef broth, tomato sauce, crushed tomatoes, and Italian seasoning to the pot, stirring well and simmering for 5 to 6 minutes.
- Stir in the dry pasta and broiled meatballs, cooking until the pasta is tender and the meatballs are cooked through.
- Add fresh parsley, serve in bowls, and garnish with grated parmesan if desired.
