Instructions
- Preheat the oven to 350°F and line a 9x11 baking dish with parchment paper.
- In a medium bowl, combine the almonds, sliced almonds, pecans, pepitas, and cranberries (if using).
- In a small pot, mix honey, vanilla extract, and sea salt over medium-low heat until it simmers, then remove from heat.
- Pour the honey mixture over the nut mixture and stir to coat all the nuts.
- Transfer the mixture to the baking dish and press down firmly.
- Bake for 17-18 minutes, then let cool.
- Once cool, break apart into clusters.
- Melt the chocolate morsels and coconut oil in the microwave, stirring until smooth.
- Drizzle the melted chocolate over the clusters and sprinkle with sea salt.
- Refrigerate for 10 minutes to let the chocolate harden before serving.
