Ingredients

The chicken

  • 2 pieces boneless, skinless chicken breasts
  • to taste salt
  • to taste freshly ground black pepper
  • 2 tablespoons olive oil

The sauce and pasta

  • cups whole milk
  • cups chicken broth
  • 2 cloves garlic, minced
  • 8 ounces fettuccine
  • ½ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • to taste fresh parsley, minced (for garnish)

Instructions

  1. Season the chicken with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat until shimmering.
  3. Add the chicken and cook until browned on one side, then flip and brown the other side.
  4. Reduce heat, add water, and cover to cook until the chicken reaches 165°F.
  5. Remove the chicken from the pan and let it rest before slicing thinly.
  6. In the same skillet, add milk, broth, and garlic, and bring to a simmer.
  7. Add the fettuccine and stir frequently for 3 minutes, then cook until al dente.
  8. Stir in heavy cream and Parmesan until smooth, then simmer until the sauce thickens.
  9. Season with salt and pepper, then stir in the sliced chicken and garnish with parsley.
