Ingredients

The chicken and coating

  • 1 pound chicken breast, cut in half horizontally
  • ½ cup all-purpose flour
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • salt and pepper to taste

The sauce

  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh thyme
  • 2 cups heavy cream
  • 4 ounces cream cheese
  • ½ cup chicken stock/broth
  • ½ cup freshly grated parmesan cheese

The pasta and greens

  • 8 ounces penne pasta, cooked according to package instructions
  • 2-3 cups spinach (optional)
  • parsley for garnishing

Instructions

  1. Season the chicken with salt and Italian seasoning.
  2. Mix flour, Italian seasoning, and garlic powder on a plate and coat the chicken in this mixture.
  3. Heat oil in a skillet over medium heat and brown the chicken for 4-5 minutes on each side, then set aside.
  4. In the same skillet, melt the butter and sauté garlic and thyme for 1-2 minutes.
  5. Lower the heat and whisk in the heavy cream and cream cheese until blended.
  6. Add chicken broth and parmesan cheese, stirring until melted and the sauce thickens.
  7. Season the sauce with salt and pepper to taste.
  8. Add the drained pasta and spinach to the skillet, mixing to combine.
  9. Return the cooked chicken to the pan to soak up some sauce.
  10. Serve warm with sliced chicken on top.
