Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, mix the flours, sugar, baking powder, cinnamon, pumpkin pie spice, and salt.
- Add the coconut oil and blend until the mixture resembles coarse sand.
- Stir in the pumpkin puree, vanilla extract, and almond milk until well combined.
- Turn the dough onto a floured surface and knead gently 10 to 12 times, then shape into an 8-inch disk.
- Cut the disk into 12 wedges and place them on the baking sheet, spaced apart.
- Bake for 14 to 16 minutes until golden brown.
- Prepare the glaze by whisking together the powdered sugar, maple syrup, and almond milk until smooth.
- Drizzle the glaze over the warm scones and serve.
