Ingredients

The scones

  • 2 cups almond flour
  • ½ cup coconut flour
  • ½ tsp baking powder
  • 2 tsp pumpkin pie spice
  • ¼ tsp salt
  • cup softened coconut oil
  • 2 large eggs
  • ½ cup pumpkin puree
  • ¼ cup coconut sugar
  • 1 tsp vanilla
  • ½ cup white chocolate chips

The drizzle

  • ½ cup white chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix almond flour, coconut flour, baking powder, pumpkin pie spice, and salt.
  3. Stir in softened coconut oil until the mixture is very crumbly.
  4. In a small bowl, whisk together eggs, pumpkin puree, coconut sugar, and vanilla.
  5. Add the egg mixture to the flour mixture and stir until a dough-like consistency is achieved.
  6. Fold in the white chocolate chips.
  7. Place the dough on a parchment-lined baking sheet and form it into a round shape.
  8. Cut the round shape into 6 equal pieces and separate them on the sheet.
  9. Bake for 22-27 minutes or until slightly golden brown.
  10. Once cooled, melt the white chocolate chips with coconut oil in the microwave and drizzle over the scones.
