Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix almond flour, coconut flour, baking powder, pumpkin pie spice, and salt.
- Stir in softened coconut oil until the mixture is very crumbly.
- In a small bowl, whisk together eggs, pumpkin puree, coconut sugar, and vanilla.
- Add the egg mixture to the flour mixture and stir until a dough-like consistency is achieved.
- Fold in the white chocolate chips.
- Place the dough on a parchment-lined baking sheet and form it into a round shape.
- Cut the round shape into 6 equal pieces and separate them on the sheet.
- Bake for 22-27 minutes or until slightly golden brown.
- Once cooled, melt the white chocolate chips with coconut oil in the microwave and drizzle over the scones.
