Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a stand mixer, whisk together flour, baking powder, pumpkin pie spice, and salt.
- Add cold butter cubes and mix on low until the mixture resembles pea-sized rounds.
- In a separate bowl, whisk together eggs, brown sugar, pumpkin puree, and vanilla extract.
- Slowly add the wet ingredients to the dry mixture until a wet dough forms, then mix in the chocolate chips briefly.
- Transfer the dough to a floured surface, form into a ball, and divide into two balls.
- Flatten each ball into a round about 1 inch thick, wrap in plastic, and refrigerate for 30 minutes.
- Cut each round into 8 mini triangles and place on the prepared baking sheet.
- Bake for 13-16 minutes until lightly browned and fluffy, then cool.
- For the glaze, whisk together powdered sugar, milk, and maple syrup until smooth.
- Drizzle the glaze over each scone and sprinkle with crushed pepitas.
