Mediterranean Quinoa Salad

The salad

The dressing

Instructions
- Combine all the ingredients in a large mixing bowl and stir gently to combine.
- Refrigerate for a couple of hours or up to overnight to allow flavors to meld.
- Serve chilled; the salad will keep well for 4-5 days in the refrigerator.
