Ingredients

  • 3 cups cooked quinoa
  • cup cucumbers
  • cup olives
  • cup feta cheese
  • 2 pieces tomatoes, diced
  • 2 teaspoons parsley
  • 1 tablespoon olive oil
  • ½ piece lime

Instructions

  1. Combine all ingredients except the lime in a bowl.
  2. Serve the salad warm or cold, as preferred.
  3. If reheating, microwave for about 1 minute or until warm.
  4. Squeeze lime juice over the salad before serving.
