Ginger Onion & Beet Soup

Ingredients

  • 1 large yellow onion
  • ½ large beet
  • 1 tablespoon avocado oil
  • to taste salt
  • to taste pepper
  • 1 clove garlic, minced
  • 1 inch fresh ginger, peeled and minced
  • 1 teaspoon fish sauce
  • 1 teaspoon coconut aminos
  • cups chicken stock

Instructions

  1. 1. Heat a medium-sized heavy-bottomed pot over low to medium heat.
  2. 2. Chop the onion and peel then chop the beet.
  3. 3. Add the avocado oil, onion, and beet to the pot, season with salt and pepper, and cook until almost tender, about 10 minutes.
  4. 4. Add the garlic and ginger, cooking for an additional 5 minutes.
  5. 5. Add the fish sauce and coconut aminos to deglaze the pot.
  6. 6. Transfer the mixture to a blender with a vent and add the chicken stock.
  7. 7. Puree until completely smooth.
  8. 8. Heat and serve with crackers.
