Ginger Onion & Beet Soup

Instructions
- 1. Heat a medium-sized heavy-bottomed pot over low to medium heat.
- 2. Chop the onion and peel then chop the beet.
- 3. Add the avocado oil, onion, and beet to the pot, season with salt and pepper, and cook until almost tender, about 10 minutes.
- 4. Add the garlic and ginger, cooking for an additional 5 minutes.
- 5. Add the fish sauce and coconut aminos to deglaze the pot.
- 6. Transfer the mixture to a blender with a vent and add the chicken stock.
- 7. Puree until completely smooth.
- 8. Heat and serve with crackers.
