Green Soup with Ginger

Ingredients

  • 1 large yellow onion
  • 2 tablespoons olive oil
  • teaspoons sea salt
  • 1 large sweet potato
  • 1 large leek
  • 1 bunch spinach
  • 1 bunch green chard
  • 3 tablespoons chopped fresh ginger
  • 2 cups vegetable broth
  • 2-4 teaspoons fresh lemon juice
  • to taste freshly ground black pepper

Instructions

  1. Chop the onion and cook it slowly in olive oil with a sprinkle of salt until soft and golden.
  2. Peel and dice the sweet potato, then add it to a large soup pot with water and salt.
  3. Wash and chop the leek, spinach, and chard, then add them to the pot along with the ginger.
  4. Bring the water to a boil, then lower the heat and simmer the soup covered for 30 minutes until the vegetables are tender.
  5. Add the caramelized onions to the pot.
  6. Decide whether to puree the soup or leave it chunky.
  7. Stir in lemon juice and black pepper, then adjust seasoning with salt or lemon juice as needed.
