Green Soup with Ginger

Instructions
- Chop the onion and cook it slowly in olive oil with a sprinkle of salt until soft and golden.
- Peel and dice the sweet potato, then add it to a large soup pot with water and salt.
- Wash and chop the leek, spinach, and chard, then add them to the pot along with the ginger.
- Bring the water to a boil, then lower the heat and simmer the soup covered for 30 minutes until the vegetables are tender.
- Add the caramelized onions to the pot.
- Decide whether to puree the soup or leave it chunky.
- Stir in lemon juice and black pepper, then adjust seasoning with salt or lemon juice as needed.
