Green Soup with Ginger

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 teaspoon celtic sea salt
  • 2 large leeks, sliced
  • 1 bunch collards
  • 2 tablespoons fresh ginger, minced
  • 2 quarts chicken stock or bone broth
  • 1 tablespoon fresh lemon juice

Instructions

  1. Heat olive oil in a large pot and cook the chopped onion with salt until soft and golden, about 20 minutes.
  2. Add sliced leeks to the pot and cook for another 10 minutes until soft.
  3. Stir in the collards and minced ginger, sautéing for an additional 5 minutes.
  4. Pour in the chicken stock and cook for 10 minutes.
  5. Remove the soup from heat and puree in batches until creamy and smooth.
  6. Pour the pureed soup back into the pot, heat it, and add lemon juice.
  7. Serve the soup warm.
