Green Soup with Ginger

Instructions
- Heat olive oil in a large pot and cook the chopped onion with salt until soft and golden, about 20 minutes.
- Add sliced leeks to the pot and cook for another 10 minutes until soft.
- Stir in the collards and minced ginger, sautéing for an additional 5 minutes.
- Pour in the chicken stock and cook for 10 minutes.
- Remove the soup from heat and puree in batches until creamy and smooth.
- Pour the pureed soup back into the pot, heat it, and add lemon juice.
- Serve the soup warm.
