Green Chicken Soup

Ingredients

  • 2 quarts Chicken Stock or Kettle & Fire Bone Broth
  • 1 bunch kale, chopped
  • 3 units carrots, sliced
  • 1 cup shiitake mushrooms, sliced
  • 1 cup shredded chicken (optional)

Instructions

  1. Heat chicken stock in a soup pot over medium heat, reserving 2 cups.
  2. Blend the reserved stock with kale until smooth and creamy.
  3. Pour the kale-stock mixture into the pot of chicken stock.
  4. Add the sliced carrots, mushrooms, and shredded chicken if using.
  5. Cook for 30 minutes or until the carrots are tender.
  6. Serve the soup.
