Croque Monsieur Egg Rolls

Instructions
- Preheat the oven to 400°F.
- In a small bowl, mix together the diced ham, chopped cheese, and minced scallions.
- Lay an egg roll wrapper on a flat surface with a corner facing you and place 3 rounded tablespoons of the filling down the center, leaving space at the top and bottom.
- Fold one side of the wrapper over the filling, then fold the top and bottom, and finally fold the remaining side to seal the egg roll with a little water.
- Repeat the process with the remaining wrappers and filling.
- Spray a baking sheet with cooking spray and place the egg rolls on it, coating the tops lightly with more cooking spray.
- Bake for 16 minutes, flipping once, until the wrappers are golden brown.
- Serve with mustard for dipping.
