Croque Monsieur Egg Rolls

Ingredients

The filling

  • 5 oz cooked lean ham, diced
  • 2 oz low fat swiss cheese, finely chopped
  • 1 tablespoon scallions, minced (green part only)

The wrappers

  • 8 pieces egg roll wrappers

For serving

  • to taste mustard

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix together the diced ham, chopped cheese, and minced scallions.
  3. Lay an egg roll wrapper on a flat surface with a corner facing you and place 3 rounded tablespoons of the filling down the center, leaving space at the top and bottom.
  4. Fold one side of the wrapper over the filling, then fold the top and bottom, and finally fold the remaining side to seal the egg roll with a little water.
  5. Repeat the process with the remaining wrappers and filling.
  6. Spray a baking sheet with cooking spray and place the egg rolls on it, coating the tops lightly with more cooking spray.
  7. Bake for 16 minutes, flipping once, until the wrappers are golden brown.
  8. Serve with mustard for dipping.
