Ham and Cheese Omelet Roll

Ingredients

The omelet

  • 6 large eggs
  • ½ cup skim milk
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The filling

  • 4 oz shredded 50% reduced fat sharp cheddar cheese
  • 4 oz thinly sliced deli ham, chopped into small pieces

Instructions

  1. Preheat the oven to 375°F and mist a 9x13 baking dish with cooking spray.
  2. Blend the eggs, milk, flour, salt, and pepper until smooth, then pour into the prepared baking dish.
  3. Bake the egg mixture for 12-15 minutes until set with no runny spots.
  4. Sprinkle the cheddar cheese and deli ham over the baked eggs and return to the oven for 1 minute to warm the filling.
  5. Let the omelet sit for 3-5 minutes to cool slightly, then roll it tightly from one short side to the other.
  6. Transfer the rolled omelet to a cutting board and slice into twelve ¾” pieces. Serve warm.
