Baked Denver Omelet

Ingredients

The omelet

  • ½ cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • cup chopped yellow onion
  • 2 tsp olive oil
  • 1 cup chopped cooked ham
  • 8 large eggs
  • cup milk
  • to taste salt
  • to taste black pepper
  • ½ cup shredded sharp cheddar cheese

For serving (optional)

  • to taste sliced avocados
  • to taste chopped chives
  • to taste hot sauce

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. Sprinkle the chopped ham evenly in the bottom of the baking dish.
  3. Sauté the red and green bell peppers and onion in olive oil until softened.
  4. Layer the sautéed vegetables over the ham and sprinkle with cheddar cheese.
  5. In a bowl, whisk together the eggs and milk, then season with salt and pepper.
  6. Pour the egg mixture over the cheese and vegetables in the baking dish.
  7. Bake in the preheated oven until puffy and set, about 22 to 25 minutes.
  8. Cut and serve warm, optionally with avocado, chives, and hot sauce.
