Western Omelette

Instructions
- Whisk together eggs, salt, and pepper in a mixing bowl until there are no white specks.
- Melt 1 tablespoon of butter in a nonstick pan over high heat and sauté the peppers and ham until tender, about 2 minutes.
- Reserve the pepper and ham mixture in a separate bowl.
- In the same pan, melt the remaining butter over medium-low heat and pour in the egg mixture.
- Scrape the sides of the pan with a rubber spatula to prevent sticking and lift the edges of the egg to allow runny egg to cook underneath.
- Once the egg is just cooked, remove from heat and carefully flip it using the spatula.
- Sprinkle cheese on one half of the omelette, add the pepper and ham mixture, and top with more cheese.
- Fold the omelette over to form a half-circle.
