Western Omelette

Ingredients

  • 4 large eggs
  • to taste salt
  • to taste pepper
  • 1 ½ tablespoon unsalted butter
  • 3 tablespoon green bell pepper, diced
  • 3 tablespoon red bell pepper, diced
  • 3 tablespoon boiled ham, diced
  • 3 tablespoon grated cheddar cheese

Instructions

  1. Whisk together eggs, salt, and pepper in a mixing bowl until there are no white specks.
  2. Melt 1 tablespoon of butter in a nonstick pan over high heat and sauté the peppers and ham until tender, about 2 minutes.
  3. Reserve the pepper and ham mixture in a separate bowl.
  4. In the same pan, melt the remaining butter over medium-low heat and pour in the egg mixture.
  5. Scrape the sides of the pan with a rubber spatula to prevent sticking and lift the edges of the egg to allow runny egg to cook underneath.
  6. Once the egg is just cooked, remove from heat and carefully flip it using the spatula.
  7. Sprinkle cheese on one half of the omelette, add the pepper and ham mixture, and top with more cheese.
  8. Fold the omelette over to form a half-circle.
