Instructions
- Whisk the eggs in a medium bowl and season with salt.
- Heat an 8-inch nonstick skillet over medium heat and coat with butter or olive oil.
- Pour the egg mixture into the pan and reduce the heat to medium-low.
- Cook without stirring until the edges just begin to set, about 10 seconds.
- Use a spatula to push the cooked egg toward the center, allowing uncooked egg to flow to the edges.
- Continue until the uncooked egg thickens and fills in the edges.
- Smooth the raw egg into an even layer and cook until mostly set.
- Add desired fillings on one side, fold the omelette, and cook until just set.
- Remove from heat, season with salt and pepper, and serve.
