Ingredients

The omelette

  • 2 large eggs
  • to taste sea salt
  • to taste freshly ground black pepper
  • for the pan butter or extra-virgin olive oil

Fillings

Instructions

  1. Whisk the eggs in a medium bowl and season with salt.
  2. Heat an 8-inch nonstick skillet over medium heat and coat with butter or olive oil.
  3. Pour the egg mixture into the pan and reduce the heat to medium-low.
  4. Cook without stirring until the edges just begin to set, about 10 seconds.
  5. Use a spatula to push the cooked egg toward the center, allowing uncooked egg to flow to the edges.
  6. Continue until the uncooked egg thickens and fills in the edges.
  7. Smooth the raw egg into an even layer and cook until mostly set.
  8. Add desired fillings on one side, fold the omelette, and cook until just set.
  9. Remove from heat, season with salt and pepper, and serve.
