Ingredients

The base

  • 1-2 teaspoons coconut oil, butter, or olive oil
  • 2 large eggs
  • a pinch salt
  • a pinch pepper

The filling

  • 2 tablespoons shredded cheese

Instructions

  1. Beat the eggs in a small bowl until mixed well.
  2. Heat a non-stick skillet over medium-low heat and melt the oil or butter.
  3. Add the beaten eggs to the pan and season with salt and pepper.
  4. Gently move the eggs around as they begin to set, pulling the edges towards the center.
  5. When the eggs are mostly set with a thin layer of loose egg on top, add cheese to one half.
  6. Fold the omelette in half and slide it out of the pan.
