Skinny Omelette

The filling

Instructions
- Heat a non-stick skillet over medium heat and pour in the beaten eggs, swirling to spread them thinly.
- Sprinkle the eggs with salt and chives, letting them set for about 15 seconds to 1 minute.
- Carefully slide the omelette out onto a clean surface.
- Spread pesto over the omelette, then add cheese and salad greens.
- Roll the omelette from one end and cut it in half diagonally. Season with salt and garnish with herbs before serving.
