Skinny Omelette

Ingredients

The omelette

  • 2 large eggs, beaten
  • a tiny pinch fine grain sea salt
  • a few tablespoons chopped chives or herbs

The filling

  • a dollop pesto
  • a bit goat cheese or feta
  • a small handful mixed salad greens

Instructions

  1. Heat a non-stick skillet over medium heat and pour in the beaten eggs, swirling to spread them thinly.
  2. Sprinkle the eggs with salt and chives, letting them set for about 15 seconds to 1 minute.
  3. Carefully slide the omelette out onto a clean surface.
  4. Spread pesto over the omelette, then add cheese and salad greens.
  5. Roll the omelette from one end and cut it in half diagonally. Season with salt and garnish with herbs before serving.
