Ingredients

  • 3 large eggs

  • 2 teaspoons minced fresh herbs (optional)

  • 1/8 teaspoon black pepper
  • 1 tablespoon butter

Instructions

  1. Whisk together eggs, water, herbs (if using), salt, and pepper in a bowl.
  2. Heat a non-stick skillet over medium-high heat and melt the butter.
  3. Pour the egg mixture into the skillet and reduce heat to medium.
  4. Stir the eggs gently until the bottom begins to set, about a minute.
  5. Add any desired fillings to one side of the eggs.
  6. Tilt the skillet and fold the omelet over itself using a spatula.
  7. Serve immediately.
