Instructions
- Whisk together eggs, milk, salt, and pepper, and let it rest.
- Heat avocado oil in a skillet and sauté the vegetables until soft.
- Add more oil to the skillet, increase heat, and pour half of the egg mixture.
- Push the cooked edges toward the center as the eggs set, until just barely set.
- Place cooked veggies and cheese on half of the omelette, then fold over.
- Cover briefly until the omelette is fully cooked and cheese is melted.
- Slide the omelette onto a plate and garnish with avocado and herbs if desired.
- Repeat the process for the second omelette.
