Ingredients

The base

  • 4 large Eggs
  • ¼ cup Milk
  • ¼ tsp Sea salt
  • 1 pinch Black pepper

The fillings

  • 1 tbsp Avocado oil
  • 3 tbsp Onions (diced finely)
  • 3 tbsp Bell peppers (diced finely)
  • 3 tbsp Mushrooms (diced finely)
  • 3 tbsp Tomatoes (diced finely)

The assembly

  • 1 tbsp Avocado oil
  • ½ cup Cheddar cheese (shredded)
  • ½ medium Avocado (sliced thinly, optional)
  • to taste none Fresh herbs (optional)

Instructions

  1. Whisk together eggs, milk, salt, and pepper, and let it rest.
  2. Heat avocado oil in a skillet and sauté the vegetables until soft.
  3. Add more oil to the skillet, increase heat, and pour half of the egg mixture.
  4. Push the cooked edges toward the center as the eggs set, until just barely set.
  5. Place cooked veggies and cheese on half of the omelette, then fold over.
  6. Cover briefly until the omelette is fully cooked and cheese is melted.
  7. Slide the omelette onto a plate and garnish with avocado and herbs if desired.
  8. Repeat the process for the second omelette.
