  • 3 large Avocados
  • 6 large Eggs

  • ¼ tsp Black pepper
  • ¼ cup Cheddar cheese
  • 2 tbsp Red bell peppers (diced finely)
  • 2 tbsp Chives (sliced thinly)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Cut the avocados in half and remove the pits, scooping out some flesh to create a well for the egg.
  3. Place the avocado halves cut side up in a baking dish and crack an egg into each half, being careful not to break the yolk.
  4. Sprinkle with sea salt and black pepper.
  5. Bake the avocados with egg for 7 minutes.
  6. Add shredded cheese on top and bake until the eggs reach your desired doneness.
  7. Garnish with diced bell peppers and chives before serving.
