Baked Eggs with Spinach

Ingredients

The base

  • 1 tablespoon olive oil
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 8 ounces spinach, large stems removed
  • 4 large eggs
  • to taste salt
  • to taste freshly ground black pepper

The toppings

  • ½ avocado, chopped
  • cup halved grape tomatoes
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Grease 4 (6 oz) ramekins with nonstick cooking spray.
  3. In a skillet, heat olive oil over medium-high heat, then add shallot and garlic, cooking for 2-3 minutes.
  4. Add spinach to the skillet and cook until wilted, about 5 minutes.
  5. Divide the cooked spinach among the ramekins.
  6. Crack an egg into each ramekin and season with salt and pepper.
  7. Place the ramekins on a rimmed baking sheet and bake for 15 to 20 minutes until the whites are set and yolks are soft in the center.
  8. Remove from the oven and garnish with tomatoes, avocado, and feta cheese. Serve immediately.
