Baked Eggs with Spinach

Instructions
- Preheat the oven to 375°F.
- Grease 4 (6 oz) ramekins with nonstick cooking spray.
- In a skillet, heat olive oil over medium-high heat, then add shallot and garlic, cooking for 2-3 minutes.
- Add spinach to the skillet and cook until wilted, about 5 minutes.
- Divide the cooked spinach among the ramekins.
- Crack an egg into each ramekin and season with salt and pepper.
- Place the ramekins on a rimmed baking sheet and bake for 15 to 20 minutes until the whites are set and yolks are soft in the center.
- Remove from the oven and garnish with tomatoes, avocado, and feta cheese. Serve immediately.
