Ingredients

The base

  • ½ teaspoon extra-virgin olive oil
  • 2 eggs eggs
  • sea salt
  • fresh black pepper

Toppings

  • crumbled feta cheese
  • chopped chives
  • fresh dill
  • sautéed asparagus
  • frozen peas, thawed
  • microgreens

Instructions

  1. Preheat the oven to 375°F and grease a 4.5-inch ramekin with olive oil.
  2. Crack 2 eggs into the ramekin.
  3. Bake for 10 to 15 minutes until the egg whites are just set and the yolk is still runny.
  4. Remove from the oven and top with desired toppings, seasoning with salt and pepper before serving.
