Instructions
- Heat butter and oil in a small saucepan, add shallot, and sauté until soft.
- Stir in herbs and salt, then remove from heat.
- Preheat the oven to 375°F (190°C). Place a small pat of butter in each of 3 ramekins and melt in the oven.
- Add 1 teaspoon of cream to each ramekin, then crack 2 eggs into each without breaking the yolks.
- Sprinkle the herb mixture over the eggs and return to the oven to bake for about 7 minutes.
- Switch to broil for 1-2 minutes until egg whites are set but yolks are still soft.
- Let stand for 3-5 minutes before serving, seasoning with salt and pepper.
