Parmesan Baked Eggs

Ingredients

The base

  • ½ tablespoon butter
  • ½ teaspoon oil
  • 1 tablespoon heavy cream

The aromatics

  • 1 unit shallot, minced
  • 1 tablespoon fresh rosemary, minced
  • ½ tablespoon fresh thyme, minced
  • ½ teaspoon sea salt

The main ingredients

  • 6 unit eggs
  • to taste unit freshly grated Parmesan cheese

Instructions

  1. Heat butter and oil in a small saucepan, add shallot, and sauté until soft.
  2. Stir in herbs and salt, then remove from heat.
  3. Preheat the oven to 375°F (190°C). Place a small pat of butter in each of 3 ramekins and melt in the oven.
  4. Add 1 teaspoon of cream to each ramekin, then crack 2 eggs into each without breaking the yolks.
  5. Sprinkle the herb mixture over the eggs and return to the oven to bake for about 7 minutes.
  6. Switch to broil for 1-2 minutes until egg whites are set but yolks are still soft.
  7. Let stand for 3-5 minutes before serving, seasoning with salt and pepper.
