Ingredients

The eggs

  • 4 large eggs

The creamy mixture

  • 1 cup Parmesan cheese, finely grated
  • ½ cup heavy cream
  • 1 teaspoon parsley, chopped
  • ¼ teaspoon salt
  • to taste freshly ground black pepper

The cooking fat

  • 2 tablespoons unsalted butter

Instructions

  1. Whisk together the Parmesan cheese, heavy cream, parsley, salt, and pepper in a bowl.
  2. Heat one tablespoon of butter in a six-inch skillet over medium-high heat.
  3. Add half of the cream mixture to the skillet and cook until bubbling.
  4. Crack two eggs into the skillet and cook until the whites are set and the yolks remain runny, about two minutes.
  5. Cover the skillet to help cook the egg whites without burning the cheese.
  6. Season the eggs with salt and pepper, and garnish with parsley.
  7. Repeat the process with the remaining ingredients.
