Instructions

  1. Whisk the eggs in a medium bowl, incorporating as much air as possible.
  2. Melt butter in a small non-stick skillet over medium-high heat until foaming subsides, swirling to coat the pan.
  3. Pour the eggs into the center of the pan and reduce heat to medium.
  4. Gently move the eggs from side to side with a rubber spatula as they begin to set, cooking for about 3 minutes.
  5. Remove from heat immediately, season with salt and pepper if desired, and serve.
