The eggs

  • 2 large eggs

The mixture

  • 2 tablespoons 2% milk
  • ½ tablespoon olive oil
  • 1 tablespoon goat cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Heat a non-stick skillet over medium to low heat.
  2. Whisk together the eggs and milk in a bowl.
  3. Add olive oil to the pan, and once fragrant, pour in the egg mixture.
  4. Allow the eggs to partially set, then fold them toward the center of the pan as they cook for 2-3 minutes.
  5. Add goat cheese and continue to fold until fully cooked.
  6. Remove from heat and season with salt and pepper.
