Instructions
- Heat a non-stick skillet over medium to low heat.
- Whisk together the eggs and milk in a bowl.
- Add olive oil to the pan, and once fragrant, pour in the egg mixture.
- Allow the eggs to partially set, then fold them toward the center of the pan as they cook for 2-3 minutes.
- Add goat cheese and continue to fold until fully cooked.
- Remove from heat and season with salt and pepper.
