The eggs

  • 2 large eggs
  • ½ cup egg whites

The greens

  • ½ cup baby spinach

Seasoning

  • a pinch sea salt
  • a pinch black pepper

Cooking fat

  • as needed butter or coconut oil or cooking spray

Instructions

  1. Blend eggs, spinach, and salt in a blender until smooth and bright green.
  2. Coat a non-stick pan with butter or oil and heat over low-medium.
  3. Pour the egg mixture into the pan and cook, stirring gently until fluffy and cooked through.
  4. Serve with whole grain toast and fruit.
