Ingredients

The eggs

  • 3 large eggs

The liquid

  • 1 teaspoon milk, plant milk, or water

The cooking fat

  • to taste extra-virgin olive oil or butter

Seasoning

  • to taste sea salt
  • to taste freshly ground black pepper

Garnish

  • to taste chopped fresh chives (optional)

Instructions

  1. Beat the eggs in a medium bowl until combined.
  2. Add the milk or water and whisk until smooth and even in color.
  3. Preheat a nonstick skillet over medium heat and brush with olive oil or melt butter.
  4. Pour in the egg mixture and let it cook undisturbed for a few seconds.
  5. Use a spatula to gently pull the eggs from the bottom of the pan to form soft curds.
  6. Continue cooking over medium-low heat, folding and stirring every few seconds.
  7. Remove from heat when mostly set with a little liquid remaining.
  8. Season with salt and pepper, and garnish with chives if desired.
