Instructions
- Beat the eggs in a medium bowl until combined.
- Add the milk or water and whisk until smooth and even in color.
- Preheat a nonstick skillet over medium heat and brush with olive oil or melt butter.
- Pour in the egg mixture and let it cook undisturbed for a few seconds.
- Use a spatula to gently pull the eggs from the bottom of the pan to form soft curds.
- Continue cooking over medium-low heat, folding and stirring every few seconds.
- Remove from heat when mostly set with a little liquid remaining.
- Season with salt and pepper, and garnish with chives if desired.
