Ingredients

The eggs

  • 8 large eggs
  • cup whole milk or milk of choice
  • 1 pinch fine sea salt
  • to taste freshly ground black pepper
  • 1 tablespoon unsalted butter
  • 3 cups baby spinach, roughly chopped
  • 4 ounces goat cheese, crumbled (about 1 cup)
  • ½ cup chopped green onion, mostly green parts
  • cup oil-packed sun-dried tomatoes, rinsed and roughly chopped

Optional toppings

  • to taste flaky sea salt for sprinkling on top
  • to taste toasted whole-grain bread

Instructions

  1. Whisk the eggs, milk, salt, and black pepper in a bowl until combined.
  2. Heat a skillet over medium heat and melt the butter.
  3. Add the spinach to the skillet and cook until wilted.
  4. Pour the egg mixture into the skillet and reduce heat to medium-low, stirring gently until clumpy but still wet.
  5. Remove from heat and stir in goat cheese, green onion, and sun-dried tomatoes.
  6. Serve promptly, optionally with flaky sea salt and toast.
