Instructions
- Preheat the oven to 400ºF.
- Sauté butter and garlic in a skillet over medium heat for about one minute.
- Whisk in flour and cook for about two minutes until it forms a paste.
- Gradually whisk in milk until smooth, then add salt, nutmeg, and pepper.
- Simmer the mixture until it thickens to a gravy-like consistency.
- Stir in grated Parmesan until melted, then add frozen spinach and cook until heated through.
- Make four wells in the spinach mixture and crack one egg into each well.
- Sprinkle crumbled feta over the dish.
- Bake for about 15 minutes until the egg whites are set, adjusting time as needed for desired doneness.
- Serve the creamed spinach and eggs in bowls, optionally with toast.
