Creamed Spinach Baked Eggs

Ingredients

The base

  • 2 Tbsp butter
  • 2 cloves garlic, minced
  • 2 Tbsp all-purpose flour
  • cups whole milk
  • ¼ tsp salt
  • tsp ground nutmeg
  • to taste freshly cracked pepper
  • ¼ cup grated Parmesan
  • ¾ lb frozen chopped spinach

The toppings

  • 4 large eggs
  • 2 oz feta

Instructions

  1. Preheat the oven to 400ºF.
  2. Sauté butter and garlic in a skillet over medium heat for about one minute.
  3. Whisk in flour and cook for about two minutes until it forms a paste.
  4. Gradually whisk in milk until smooth, then add salt, nutmeg, and pepper.
  5. Simmer the mixture until it thickens to a gravy-like consistency.
  6. Stir in grated Parmesan until melted, then add frozen spinach and cook until heated through.
  7. Make four wells in the spinach mixture and crack one egg into each well.
  8. Sprinkle crumbled feta over the dish.
  9. Bake for about 15 minutes until the egg whites are set, adjusting time as needed for desired doneness.
  10. Serve the creamed spinach and eggs in bowls, optionally with toast.
