Ingredients

The spinach

  • 12 oz frozen chopped spinach

The sauce

  • 4 Tbsp butter
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 1.5 cups whole milk
  • cup grated Parmesan
  • tsp nutmeg
  • tsp salt
  • tsp freshly cracked black pepper

Instructions

  1. Thaw the frozen spinach and squeeze out excess moisture.
  2. Melt the butter in a skillet over medium heat and sauté the minced garlic for about one minute.
  3. Add the flour to the skillet and whisk together with the butter, cooking for about two minutes.
  4. Whisk in the milk and continue to cook until the sauce thickens.
  5. Add the Parmesan to the sauce and whisk until melted.
  6. Season the sauce with nutmeg, salt, and pepper.
  7. Stir in the chopped spinach until evenly combined and adjust seasoning if necessary.
