Creamed Spinach

Ingredients

The base

  • 3 Tbsp unsalted butter
  • ½ cup finely chopped shallot
  • 1 Tbsp minced garlic
  • 2 lbs baby spinach
  • Tbsp all-purpose flour
  • cup heavy cream
  • 2 pinches nutmeg
  • to taste salt
  • to taste black pepper

The cheese

  • 4 oz cream cheese
  • ¾ cup finely shredded parmesan cheese

Instructions

  1. Melt butter in a large pot over medium heat, then add shallot and sauté until softened.
  2. Add garlic and sauté for an additional 30 seconds.
  3. Add spinach in four batches, tossing between each until nearly wilted.
  4. Sprinkle in flour and cook while tossing for 1 minute.
  5. Gradually pour in heavy cream while stirring, then season with salt, pepper, and nutmeg.
  6. Cook and stir until the mixture thickens, about 1 minute.
  7. Reduce heat to low, add cream cheese and parmesan, stirring until melted.
  8. Transfer to a serving dish and serve warm.
