Creamed Spinach

The cheese

cream cheese

finely shredded parmesan cheese
Instructions
- Melt butter in a large pot over medium heat, then add shallot and sauté until softened.
- Add garlic and sauté for an additional 30 seconds.
- Add spinach in four batches, tossing between each until nearly wilted.
- Sprinkle in flour and cook while tossing for 1 minute.
- Gradually pour in heavy cream while stirring, then season with salt, pepper, and nutmeg.
- Cook and stir until the mixture thickens, about 1 minute.
- Reduce heat to low, add cream cheese and parmesan, stirring until melted.
- Transfer to a serving dish and serve warm.
